Food Farm is a family owned mobile food truck that serves lunches to beautiful San Diego – one of my favorite places in Southern California. They pride themselves in supporting local farmers and businesses. Food Network’s Eat St featured Food Farm last season, and piqued our curiosity about this now very popular food truck.
Back in March, we featured Food Farm in our Wellness Wednesday series after catching their Eat St episode, and have always raved about their fare. Serving up a healthy twist on classic dishes such as Grass Fed Sliders, an Avocado Melt Sandwich and a yummy Coconut Rice Desert, these guys are a perfect addition to “healthy, sunny San Diego.”
Today I’m posting a recipe including some of the best things in the world – avocado, pesto, and BACON! Check out this recipe for Food Farm’s Avocado Melt and enjoy a healthier weekend, thanks to Eat St!
1/2 avocado, sliced
Smear pesto onto one side of each slice of bread.
Top with the Swiss cheese.
Place non-cheese side of bread slices onto hot grill or pan to toast and melt cheese (tenting the bread helps to steam and cook faster).
Once the cheese is melted place sliced avocado & bacon onto cheese.
Close sandwich and enjoy!
Yield: 1 serving
To make the pesto:
ARUGULA WALNUT PESTO
1/2 cup walnuts
Zest of 1 lemon
2 cloves garlic
1/2 cup grated Parmesan cheese
900 grams arugula
1/2 cup basil
Juice of 1 lemon
1 cup olive oil
Salt, pepper, water to taste and consistency
Combine walnuts, lemon zest, garlic and cheese in a food processor until smooth. Add remaining ingredients, and process until smooth. Keeps for up to 1 week in the refrigerator.
