There’s no better way to kick off Paula Deen Week here at Stitches ‘n Dishes than with a dose of some delish home cookin’, just the way Mama Deen would do it herself. And, nothin’ says Southern cuisine quite like a hearty serving of chicken ‘n’ waffles. In light of the recent news about a lawsuit, Stitch has declared Paula Deen Week an official holiday at Stitches ‘n Dishes, and we’re showcasing the personality we’ve all come to love in the Queen of Southern Cuisine in all of its spicy, feisty, warm-hearted glory… y’all! So put the lawyers aside and enjoy.

Way back when Stitch was just a baby, and Stitches ‘n Dishes was even younger, one of our first reviews was at The Grilled Cheese Truck in Los Angeles. Rodney Washington, our roving food critic in Southern California at the time, visited the now famous comfort food eatery on wheels after discovering this gourmet treasure on the Cooking Channel’s popular show, Unique Eats.

Unique Eats is a program that highlights and celebrates the best in America’s latest obsession — mobile dining. Of course, that claim to fame of The Grilled Cheese Truck was just beginning. It was later featured on Food Network‘s Eat St. in its Season 1 premier episode, before literally blowing up in every major outlet in the country.

The Grilled Cheese Truck has been featured on local and national news programs, every major television network, as well as Tasting Table, Rachael Ray Show, Unwrapped (Food Network), Travel Channel’s Food Truck Paradise, TMZ, BBC Travel, Cooking Channel’s Unique Eats, Food Network Magazine, and USA Today to name just a few. Without a doubt, if Paula Deen had caught wind of The Grilled Cheese Truck herself, she’d be the first in line to try their Chicken and Waffle Melt.

I spotted The Grilled Cheese Truck at Wet Wednesdays at the Marine Emporium Landing  in Oxnard, California recently, a premier destination in the Channel Islands Harbor, about halfway between Santa Barbara and Malibu in a lovely resort district. It features trips to the Channel Islands National Park, parties and harbor cruises, whale watching, sports fishing, Segway tours, bicycle and surrey rentals, kayak rentals and guided tours at the Islands, as well as several restaurants and retailers.

The Grilled Cheese Truck speaks directly to Paula Deen’s love for good old fashioned comfort food, paying homage to a great American favorite, the grilled cheese sandwich in many delish variations. A regular rotating special on the menu, The Chicken and Waffle Melt is served on Waffled Wednesdays at The Grilled Cheese Truck, so it made perfect sense to order one at Wet Wednesdays.

There are at least 10 different variations of the waffle, but to keep things simple, The Grilled Cheese Truck serves their Chicken and Waffle Melt with traditional American waffles – the way Paula would. American waffles vary significantly throughout the country – some are thicker and fluffier, some are round, some are square, and they’re typically found on breakfast menus. But, they’re also found very commonly in savory dishes and desserts.

Paula featured Chicken and Waffles on a Stick on Paula’s Best Dishes (Party Bites episode) – one of my favorite episodes, probably because I’m a push-over for some Chicken and Waffles… and parties.

The Grilled Cheese Truck’s Chicken and Waffle Melt is made with two waffles, supporting a crispy and juicy fried chicken breast and cheddar cheese, and served with traditional country gravy with that down-home taste that will stick to your ribs.
